This is indeed a tough conundrum. I think I have the answer, though:
Don't wind them all. It's a lot of work! There is a simple way to handle this. Send me the J and R models. I will devote the huge resources to maintaining their state of wind and the correct dates, and will offer an on-demand video link to the watches so you can ensure your babies stay wound. And because I am a very generous soul, I will do this at no cost to you - it will be my charitable mission, making the world a better place through Patek-winding.
Then all you have to do is keep the P wound and wear it. Of course, you want to get fit first - well, I have a solution for getting you fit too: Send me the P model as well. I will wear it full-time and email you pictures of the P as it goes round its--that is, my life, daily, until you reach the pre-agreed fitness point at which I will return the P to you. (It probably won't take long because you'll lose weight just from pining over its loss. I certainly would...) Again, I offer this out of the goodness of my own heart - why, I'll even pay for the courier.
Seriously, that P is just beautiful. If I set myself the goal of losing weight before wearing that thing, I would be on the treadmill 24/7! Maybe that's a good idea - watch deprivation as a way of achieving one's goals?
